Quaker Oats & Fresh Orange Muffins

¾ cup powdered Quaker Oats*
¾ cup whole wheat flour
⅓ cup powdered sugar
5 tbsp freshly squeezed orange juice
2 tsp orange peel/zest
1 tsp baking powder
¼ cup skimmed milk
⅓ cup low fat yogurt
1 ripe banana mashed
¼ cup chopped almonds, walnuts & raisins
a few drops of orange essence (optional)
Sift together powdered Quaker Oats*, flour, baking powder & salt.
Whisk yogurt in a large bowl and mix remaining ingredients.
Gently add flour mixture & nuts.
Pre-heat oven to 180°C. Pour in lined muffin cups and bake for 25 mins.
*For powdered Quaker Oats, roast Quaker Oats for 2-3 mins.
Cool and grind in a mixer.
