Quaker Oats & Tofu Manchurian

For fritters
½ cup lightly roasted Quaker Oats*
150g Tofu
1 cup seasonal vegetables finely chopped
2 tsp garlic finely chopped
oil for brushing
salt, pepper & chilli to taste
For gravy
1 tsp finely chopped ginger garlic
1 tsp corn flour dissolved in 2 tbsp water
1 tsp soy sauce
½ cup finely chopped seasonal vegetables
salt, pepper & vinegar to taste
Boil tofu in salted water for 3-4 mins and crumble.
Mix to fritter ingredients & shape into small balls.
Brush with a little oil and bake till crisp.
Heat a drop of oil in a non-stick pan. Saute ginger, garlic & vegetables.
Add 1½ cup water, salt, pepper, soy sauce and boil.
Mix in dissolved corn flour and simmer till thick. Add fritters & vinegar. Serve hot.
