Quaker Oats Apple Carrot Muffins

½ cup Quaker Oats
½ cup whole wheat flour
⅓ cup powdered sugar
4 tbsp skimmed milk
¼ cup chopped apple
¼ tsp freshly grated ginger
½ cup finely grated carrot
1 tsp baking powder
¼ tsp cinnamon
1 tsp vegetable oil
¼ tsp vanilla flavour
4 tbsp raisins & walnuts
2 apples – peeled & chopped for making apple puree
Sift together flour, baking powder & cinnamon. Mix Quaker Oats and keep aside.
Pressure cook apples with ¼ cup water. Cool and make smooth puree.
Add ginger, oil, vanilla, milk & sugar. Pour over the flour mixture and blend.
Add carrots, chopped apples & nuts.
Pre-heat oven to 180℃. Pour in lined muffin cups and bake for 25 mins or till done.
