Quaker Oats Mushroom Crackers

6 veggie crackers (biscuits)
100g mushroom - finely chopped
1 onion - chopped
1 tbsp chopped fresh coriander
2 tbsp low fat cheese (grated)
1 tbsp roasted peanuts
salt to taste
½ tsp freshly ground pepper
Sauce
¼ cup (25g) roasted Quaker Oats
1 cup (200g) skimmed milk
Topping
1 tomato - cut into thin strips
Heat a pan, add onions and saute for a minute. Add mushrooms and saute till dry.
Add Quaker Oats and milk. Stir till thick.
Remove from heat and add salt, pepper, peanuts, chopped fresh coriander and cheese.
Put 1 tbsp mushroom mixture on each cracker. Garnish with coriander and tomato.
