Quaker Oats Peanut Broccoli Discs
Quaker Breakfast
1 small broccoli - chopped finely along with tender stalks (1½ cups)
1 onion - chopped finely
¼ cup roasted peanuts - coarsely crushed
Sauce
¼ cup (25g) Quaker Oats
¾ cup (125ml) skimmed milk
salt to taste
½ tsp pepper
Heat a pan. Add chopped onion and stir. Add chopped broccoli and salt and cook for 2-3
mins till slightly tender.
Remove from heat and add crushed peanuts. Keep aside.
Cook till sauce thickens and leaves sides of the pan.
Add salt, pepper and cooked broccoli. Cook for 1-2 mins on low heat. Refrigerate to cool.
Make balls and then flatten to make discs of the mixture with wet hands. Refrigerate.
When serving time, grill for 10 mins. Turn and grill again for 5 mins, OR brown them on a
non stick pan.
Serve hot.
