Quaker Oats Sambar

Boil together
¼ cup (25g) arhar or toor dal (red lentils) - soaked for 30 mins
2-3 flakes garlic - chopped
½ tsp turmeric powder, salt to taste, ½ tsp red chilli powder
1 medium onion - sliced
Grind together to a paste for mixing into the sambar
½ cup (50g) Quaker Oats
3 tbsp (30g) sambar powder, ½ cup (50g) tomato puree (prepared in a mixer) pulp of
a walnut size ball of tamarind (soak in ¼ cup water, mash and strain)
Other ingredients
1 tsp black mustard seeds, 2 dry red chillies, 2 tbsp curry leaves
a tiny piece of jaggery (gur) - (optional)
1 cup mixed chopped vegetables (pumpkin, cauliflower, carrot, beans etc.)
Pressure cook dal and all vegetables with 3 cups water.
Simmer on low heat for 20 mins. Mash dal and squeeze the garlic pod into the dal.
Heat pan, add 1 tsp mustard seeds and let seeds splutter.
Add dry red chillies & curry leaves and fry for 10 secs.
Pour boiled dal and boil for 2-3 mins.
Add Quaker Oats-tamarind paste to the dal & boil for 4-5 mins.
Dilute with hot water & salt if thick. Add Jaggery (optional) and serve hot.
