Quaker Oats Stuffed Vegetables

½ cup roasted & powdered Quaker Oats*
4 small capsicums
4 firm tomatoes
½ cup boiled & mashed potatoes
½ cup mashed cottage cheese (paneer)
½ cup shelled boiled peas
1 medium sized onion finely chopped
1 tsp coriander powder
½ tsp roasted cumin (jeera ) powder
½ tsp chat masala
¼ tsp garam masala
½ tsp crushed garlic
few drops of lemon juice
2 tsp finely chopped green coriander
1 tsp chopped mint
salt & chili powder to taste
1 tsp Quaker Oats for topping
Clean and scoop seeds from capsicum and tomato.
Grease non-stick pan and saute onions till pink.
Add all ingredients and cook for 2 mins & cool.
Stuff mixture in vegetables and top with Quaker Oats.
Pre-heat oven. Bake at 200°C for 15 mins or till tender.
*For powdered Quaker Oats, roast Quaker Oats for 2-3 mins.
Cool and grind in a mixer.
